A group of Italian researchers set out in the summer of 2010 to retrace Marco Polo’s steps on the Silk Road, not for trade but for the advancement of science. Of food relevance is one of the objectives of the project, which is to find differences in the genetics of taste and then compare them to differences in gastronomic traditions.
