Pasta: History, Technologies and Secrets of Italian Tradition (The Barilla Company) – Don’t expect a straightforward hard-sell of Barilla pasta products, as this book is well-researched and full of period photos and literary citations about pasta. Though most of the book is dedicated to the modern methods of pasta production, as well as its nutritional content, there is a thorough section at the beginning that discusses pasta’s origins and history (including, interestingly enough, accounts of workers rebellions against industrialization).
